Buttery Sourdough Crackers

Makes 2-2.5 dozen crackers

Ingredients

  • 3/4 cup active sourdough starter stirred down or 3/4 cup discard
  • 3 tbs melted butter
  • 1/4 tsp salt
  • 1-2 tbs favorite herbs and seasonings
  • 1 tsp truvia or similar sweetener

Method

  1. Melt the butter and add to sourdough and stir together with the salt.
  2. Spread thin onto a cookie sheet that is lined with parchment paper using a spatula. Pay attention to spreading the dough evenly so that all crackers are the same crispiness.
  3. One recipe should spread out over a 13x16" parchment paper or the equivalent
  4. Bake at 350℉ for 10 minutes then remove from oven and score the crackers (I use a pizza cutter).
  5. Return to oven for 20-25 minutes more and remove when crackers are slightly golden in color.
  6. While the crackers are still hot, I put them into a bowl and toss with a bit of salt and seasoning of choice. This gives a pleasing savory rush to the tastebuds with each bite.

Notes

My family wasn't crazy over the tart flavor of sourdough crackers, the sweetener cut that tart flavor and the crackers were a hit. If your family doesn't mind the tart flavor of sourdough, you might not need to add the sweetener. More butter gives a flakier cracker!
