These waffle whoopie pies are easy to make with simple ingredients you probably have on hand, and they’re perfect for breakfast, dessert, or a special snack. The waffles provide a tender, slightly crisp “cookie” that pairs beautifully with a smooth, sweet filling—think cream cheese or marshmallow fluff. Whether you’re feeding a crowd or just craving something a little different, this playful recipe brings homemade warmth and joy to the table in every bite.

Method
- Cream together the granulated sugar, butter and eggs.
- Mix together sour cream and baking soda and set aside.
- To your cream mixture, add baking powder, vanilla, salt, and the sour cream mixture.
- Add the flour and chocolate chips.
- Mix thoroughly and drop by the spoonful onto hot waffle iron, close iron, and 'bake' for 3-5 minutes.
- Cool cookies and make sandwich cookies by filling with one of the fillings from the Whoopie Pie frostings and fillings recipe.
