Whoopie pies with waffles? Yes, please! Imagine soft, fluffy waffles sandwiching a sweet, creamy filling—just like classic whoopie pies, but with a fun twist. These waffle whoopie pies are easy to make with simple ingredients you probably have on hand, and they’re perfect for breakfast, dessert, or a special snack. The waffles provide a tender, slightly crisp “cookie” that pairs beautifully with a smooth, sweet filling—think cream cheese or marshmallow fluff. Whether you’re feeding a crowd or just craving something a little different, this playful recipe brings homemade warmth and joy to the table in every bite.

Waffle Whoopie Pies

Makes 18-24 cookies

Ingredients
  

  • 2 cups granulated sugar
  • 1 cup butter
  • 4 eggs
  • 2 cups sour cream I use clabbered milk or cultured buttermilk
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 1 tsp salt
  • 4 cups all purpose flour
  • 2 cups chocolate chips

Method
 

  1. Cream together the granulated sugar, butter and eggs.
  2. Mix together sour cream and baking soda and set aside.
  3. To your cream mixture, add baking powder, vanilla, salt, and the sour cream mixture.
  4. Add the flour and chocolate chips.
  5. Mix thoroughly and drop by the spoonful onto hot waffle iron, close iron, and 'bake' for 3-5 minutes.
  6. Cool cookies and make sandwich cookies by filling with one of the fillings from the Whoopie Pie frostings and fillings recipe.
