Lemon Cream Bars

Some recipes just feel like sunshine in a pan—and these Lemon Cream Bars are exactly that. I love making these on quiet afternoons, especially when the house is full and we’re needing a little something to brighten the day. Simple ingredients, easy steps, and a dessert that disappears fast—especially with little hands around! Lemon Cream Bars

Ingredients
  

Crust
  • 1 cup butter cubed
  • 2 cups flour
  • 1/2 cup granulated sugar
  • 1/2 tsp salt
Lemon mixture
  • 8 oz cream cheese
  • 2 cups granulated sugar
  • 1/4 cup flour
  • 3/4 cup lemon or lime juice fresh or bottled
  • 1/3 cup powdered sugar
  • 6 eggs
  • 1 tsp vanilla
  • 1/4 tsp salt

Method
 

  1. Mix together all Crust ingredients with pastry cutter or food processor.
  2. Press into a 9x13 pan and bake at 350℉ for 10 min or until slightly tan.
  3. Whip together Lemon Mixture ingredients until smooth.
  4. Pour lemon mixture over baked crust (no need to cool the crust), return to oven for an additional 30 minutes.
  5. Chill, cut into squares, and serve.

Notes

When these bake the cream cheese and lemon separate and the final product looks like a 3 layer dessert that you spent hours preparing!
