Sloppy Joes

Sloppy Joes also make a great recipe for canning, giving you a quick, homemade meal ready to heat and serve straight from the pantry. This version uses simple, shelf-stable ingredients—ground beef, onions, tomato sauce or crushed tomatoes, a bit of vinegar, brown sugar, mustard, and salt—for a tangy-sweet sauce that holds up beautifully when pressure canned. It’s a perfect make-ahead meal for busy seasons or stocking your shelves with real food. When you’re ready to serve, just warm it up, spoon it onto buns, and dinner is done. Canning sloppy joe filling is easy, practical, and so satisfying to have on hand.

Canned Sloppy Joes

Makes approximately 14 quarts

Ingredients
  

  • 24 lbs ground beef
  • 6 cups finely chopped onions
  • 1 1/2 cup granulated sugar
  • 1 1/2 cup brown sugar
  • 3 tbs worcestershire sauce
  • 2 tbs black pepper
  • 4 tbs salt
  • 3 quarts ketchup 96 oz
  • 2 1/4 cup vinegar
  • 1/2 cup prepared yellow mustard

Method
 

  1. Brown the ground beef and onions.
  2. Add in the sugars, worcestershire sauce, pepper, salt, ketchup, vinegar, and prepared yellow mustard.
  3. Mix all together, adjust ingredients according to your taste preference.
  4. Ladle into clean jars.
  5. Add lids and rings.
  6. Pressure can quarts for 45 minutes at 15 lbs pressure.
  7. Pints for 30 minutes at 15 lbs pressure.

Notes

Could use maple syrup in place of sugar.
