Zucchini Pineapple

Seven pint jars

Ingredients
  

  • 5-7 8-10 inch zucchinis
  • 2 tbs granulated sugar
  • 2 tbs lemon juice
  • 46 oz 100% pineapple juice

Method
 

  1. Peel and dice or shred your zucchini and pack into clean pint jars.
  2. To each pint jar of zucchini, add 2 tbs granulated sugar, 2 tbs lemon juice. Fill the jar to 1-1.5" head space with pineapple juice.
  3. Place lids onto jars and turn rings finger tight.
  4. Water bath can for 25 minutes.
