Method
- Peel and dice or shred your zucchini and pack into clean pint jars.
- To each pint jar of zucchini, add 2 tbs granulated sugar, 2 tbs lemon juice. Fill the jar to 1-1.5" head space with pineapple juice.
- Place lids onto jars and turn rings finger tight.
- Water bath can for 25 minutes.
