Shoo-Fly Pie

Makes three pies

Ingredients
  

  • 2 cups flour
  • 1 1/2 cups brown sugar
  • 4 tbs butter
  • 2 eggs
  • 2 cups molasses
  • 2 tbs blackstrap
  • 1/2 cup warm water
  • 2 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp salt

Method
 

  1. Mix together flour, brown sugar, and butter until crumbly.
  2. Set aside 1 cup of the crumb.
  3. Blend together the eggs, molasses, and blackstrap.
  4. Mix together warm water, baking soda, vanilla, and salt and add to molasses mixture.
  5. Fold remaining crumbs into molasses mixture and pour into 3 unbaked pie shells. Top with 1 cup of crumbs.
  6. Bake at 350℉ for 45-50 minutes.
