Apple Rollups

Servings: 8 servings

Ingredients
  

Dough
  • 2 cups all purpose flour
  • 2.5 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup lard or shortening
  • 1/2 cup milk
Filling
  • butter softened
  • brown sugar
  • cinnamon
  • 3-4 cups finely chopped apples
Syrup
  • 1.5 cups hot water
  • 1 cup brown sugar
  • 1/4 cup butter
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Method
 

To make the dough. Mix together until crumbly:
  1. All purpose flour, baking powder, salt, and lard.
  2. Add the milk.
  3. Mix by hand or with a mixing spoon until it 'comes together like pie crust dough'.
  4. Alternatively, use your favorite pastry crust recipe.
Assemble
  1. Roll out the dough into approximately 1/4 inch thick rectangle
  2. Spread generously with the softened butter then brown sugar.
  3. Sprinkle with cinnamon.
  4. Then add 3-4 cups finely chopped apples.
Beginning at the long side, roll up the dough with all the layers like a cinnamon roll. Cut into 2" slices. Layer these slices into a 9x13 pan.
    Syrup
    1. In a heavy bottom pan, cook together all of the syrup ingredients for 5-8 minutes.
    2. Pour syrup over the rollups and bake for 45-55 minutes or until slightly browned over top.
